1. Waikiki Meatballs

Ingredients

  • 1 1/2 pounds ground beef
  • 2/3 cup cracker crumbs
  • 1/3 cup minced onion
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ginger
  • 1/4 cup milk
  • 1 tablespoon shortening
  • 2 tablespoons cornstarch
  • 1/2 cup packed brown sugar

  • 1/3 cup vinegar
  • 1 tablespoon soy sauce
  • 1/3 cup chopped green pepper

Instructions

  1. Mix beef, crumbs, onion, egg, salt, ginger, and milk thoroughly. Shape mixture into balls.
  2. Melt shortening in a large skillet; brown and cook meatballs. Alternatively, bake at 400°F for 20-30 minutes.
  3. Remove meatballs and keep warm. Pour fat from skillet.
  4. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar, and soy sauce until smooth. Cook over medium heat until thickened and boiling. Boil and stir for one minute.

Ingredients

  • 1 lb ground beef
  • 1 large chopped onion
  • 2-3 chopped garlic cloves
  • 1 small can tomato sauce
  • 1/4 cup dry white wine
  • Pimiento-stuffed olives
  • Raisins
  • Salt and pepper to taste

Instructions

  1. Brown ground beef, onions, and garlic in a large skillet. Drain excess fat.
  2. Add tomato sauce and wine. Simmer on medium-low heat.
  3. Chop olives and add to the mixture along with raisins. Adjust seasonings.
  4. Serve over white rice.

3. Meat Turnovers

Ingredients

  • Ground beef
  • Favorite spices (onion, garlic, black pepper, basil, marjoram, oregano)
  • Sharp cheddar cheese
  • Garlic pizza dough
  • 1 raw egg

Instructions

  1. Cook ground beef with spices. Drain and cool.
  2. Mix with cheddar cheese and fold inside garlic pizza dough like a turnover.
  3. Glaze with raw egg and bake at 375°F for 20 minutes or until browned.

Ingredients

  • 3 pounds lean ground beef
  • 3/4 cup bread crumbs
  • 2 tsp pepper

Instructions

  1. Preheat oven to 300°F.

5. Stuffed Green Peppers

Ingredients

  • 6 green bell peppers
  • Salt to taste
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • 1 (14.5 oz) can chopped whole peeled tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup uncooked rice
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 2 (10.75 oz) cans condensed tomato soup
  • Water as needed

Instructions

  1. Boil a large pot of salted water. Cut tops off peppers and remove seeds. Cook peppers for 5 minutes; drain and sprinkle with salt.
  2. Sauté beef and onions until browned. Drain fat and season with salt and pepper.
  3. Stir in tomatoes, rice, 1/2 cup water, and Worcestershire sauce. Simmer for 15 minutes. Stir in cheese.

  • Beef stock to fill crock pot
  • Spices to taste (garlic powder, salt, pepper)

Instructions

  1. Combine all ingredients in a crock pot.
  2. Cook on low for several hours until vegetables are tender.

7. Jamaican Macaroni

Ingredients

  • 2 cups (8 oz) elbow macaroni
  • 1 pound extra-lean ground beef
  • 1 cup sliced carrots
  • 1 large green bell pepper
  • 1 large onion
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup Worcestershire sauce
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons seasoning salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon hot pepper sauce

Instructions

  1. Cook macaroni as directed. Chop carrots and bell pepper.
  2. Brown meat in a skillet. Add carrots and bell pepper.
  3. Add chopped onion, tomatoes, Worcestershire sauce, garlic powder, seasoning salt, pepper, and hot pepper sauce. Cook until vegetables are tender.
  4. Drain macaroni and add to skillet. Stir well and serve.

8. Wonton Soup

Ingredients

  • 18-24 wonton wrappers
  • 1/2 pound lean ground beef, browned and drained
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Few drops sesame oil
  • 1 teaspoon sherry
  • 1/2 teaspoon sugar
  • 1 finely minced green onion
  • 1 teaspoon cornstarch
  • 2 dashes white pepper
  • Water for boiling wontons
  • 4 1/2 - 5 cups chicken stock
  • Thinly sliced green onion
  • Few drops sesame oil (optional)

Instructions

  1. Combine filling ingredients in a bowl.
  2. Fill wonton wrappers with a teaspoon of filling. Seal edges with water.
  3. Boil wontons for 5-8 minutes until they rise to the top.
  4. Bring chicken stock to a boil. Add wontons and green onion. Remove from heat and add sesame oil.
  5. Serve with 6 wontons per person.

9. Lion’s Head Meatballs

Ingredients

  • 1 pound bok choy or Napa cabbage
  • 1-2 minced green onions
  • 1 teaspoon minced ginger
  • 1 large egg
  • 1 pound ground pork
  • 3/4 teaspoon salt
  • 1 teaspoon sugar
  • 2 1/2 teaspoons dry sherry
  • 3 tablespoons light soy sauce (divided)
  • 1/2 teaspoon sesame oil
  • Black or white pepper to taste
  • 2-3 tablespoons cornstarch or flour
  • 2 tablespoons vegetable oil
  • 1 1/2 cups chicken broth

Instructions

  1. Wash and cut bok choy into 3-inch strips. Mince ginger and green onion.
  2. Beat egg in a small bowl. Combine pork, green onion, ginger, salt, sugar, sherry, 1 tablespoon soy sauce, sesame oil, pepper, and egg. Mix thoroughly.
  3. Form into 4 large meatballs. Flatten slightly.
  4. Heat oil in a skillet. Brown meatballs on both sides.
  5. Heat chicken broth and 2 tablespoons soy sauce in a saucepan. Add meatballs and simmer for 10 minutes. Add bok choy and simmer for another 15 minutes.
  6. Serve meatballs with greens and broth.

10. Crock Pot Sloppy Joes

Ingredients

  • 2 lbs ground beef
  • 1-2 packets onion soup mix
  • 2 (8 oz) cans tomato sauce
