Mouth-watering recipes for the festival of Rakhi

Methi Pulao

Ingredients

2 to 3 Cups of Basmati Rice
1 cup of green peas
50gms of deep fried small cubes of paneer
Small bunch of chopped methi (fenugreek) leaves
2 sliced tomatoes
garlic paste
2-3 chopped green chilies
1/4th tablespoon of turmeric powder
Red chili powder
Salt
1tablespoon of  oil or butter

Methods

Wash methi properly  and keep it aside.
Heat oil in a pan and add garlic paste and fry until they turn light brown.
Then add tomatoes, peas, methi, green chilies, salt, chili powder and turmeric powder. Fry for 8-10 minutes.
Add rice and cook for  5 minutes.
Pour the mixture in a pressure cooker  and heat on a low flame for 5 minutes.
Garnish  the dish with fried paneer.

Stuffed Capsicum

Ingredients

5-6  green Capsicum
2 boiled potatoes
2 tablespoon  ofboiled green peas
1 chopped Onion
1/4th tablespoon of turmeric powder
Red chili powder to taste
1/4th tablespoon of Garam masala
1/4th tablespoon of Dry mango powder (amchur)
Salt To Taste
Oil or ghee

Methods

Wash the capsicums and boil them until they become soft, drain water and keep aside to cool.
Mash the boiled potatoes.
In a pan, heat 2-tbsp oil/ghee and add chopped onion and fry till it turns golden brown.
Now add all spices, mashed potatoes and peas and cook for few moments.
With knife cut the stem of the capsicum and remove the seeds and add the stuffing in it.
Now take oil/ghee in a container and cook the stuffed capsicums.
Garnish the fried capsicum with grated paneer, chopped coriander leaves and sliced tomato. Serve it hot.

Badam Shake

Ingredients
  
2 glass milk
10 almonds
2-3 saffron leaves also known as kesar
2 green cardamom
4 teaspoon of sugar
ice as required

Methods

Soak badam for 6-7 hours.
Dip saffron leaves in warm milk.
Now blend badam, kesar, sugar and milk in a mixer.
Grind green cardamom to a fine powder.
Pour it in the glass along with some crushed ice.
Serve the drink chilled.

This cool drink after heavy food will definitely help in speedy digestion.


Chocolate Bread Pudding (Egg less)

Ingredients

300 ml Milk
4-5 tablespoons of Sugar
4 sliced Brown Bread
3 Eggs
2 tablespoon of Drinking Chocolate or cocoa powder
1/2 tablespoon of Vanilla Essence
250 ml thick Sweetened Cream

Methods

Cut the bread into pieces. Beat the eggs and add the essence.
Warm the milk and mix in the sugar. Then gently mix in the coca powder.
Grease pudding mould with butter and pour the mixture into the mould.
Steam in a pressure cooker without whistle for 30 - 40 minutes, until the pudding is spongy.
Then put it in the fridge for 1 hour before serving with fresh, thick and sweetened cream.
