Ingredients:

   1.250 gms Cottage Cheese (Paneer) How to make   paneer
   2.4 Tomato (Tamatar)
   3.3 Onion (Pyaj)
   4. 1 " long piece Ginger (Adrak)
   5. 2 Green Chilly (Hari Mirch)
   6. 1 cup Mava
   7. 1/2 tsp Red Chili Powder (Lal Mirchi)
   8.1/4 tsp Turmeric (Haldi)
   9. 1/2 tsp Garam Masala
  10.1/2 tblsp Clarified Butter (Ghee)

Method :

    *Cut paneer in square pieces.
    *Grind onion (pyaj), ginger (adrak), green chilly (harimirch).
     *Grate mava.
    *Heat clarified butter (ghee) in a pan.
    * Add onion (pyaj), tomato (tamatar) paste.
    *Continue cooking it on medium flame till ghee/oil begins to separate.
    * Add mava, cream (malai).
    * Simmer for 2 minutes.
    * Add salt, red chili powder (lal mirchi), turmeric (haldi), garam masala.
    * Add cottage cheese (paneer) pieceswith 1/2 cup of water
    * When the gravy thickens put off the flame.
    * Take off the fire and serve hot.


VEGETABLE BIRYANI



Ingredients:

   1.45ml/3 tbsp ghee

   2.1 onion, chopped

   3.2 tomatoes, chopped

   4. 2.5cm/1 in cinnamon stick

   5.225/8 oz mixed vegetables, diced
   6. 225g/1 cup long-grain rice, soaked

   7. 600ml/1 pt vegetable stock

    8.50g/2 oz paneer, cubed and lightly fried

   9.100g/1 cup nuts and fruit, chopped

   10. 2 bay leaves

   11. 6 black peppercorns

   12.5 cloves

   13.  5 cardamom pods

   14. Add salt according to taste

Method :

    *   Heat the ghee and fry the onion until golden.
    * Remove and reserve half the onion. Add the tomato to the pan, stir in the spices and cook for about 5 minutes until the ghee appears on the       surface.
    *Add the vegetables and salt, cover and simmer for about 5 minutes.
    *Stir in the rice and stock, bring to the boil then simmer gently for 5 minutes.
    *Add the paneer and nuts and mix well. Cover and simmer for a further 5 minutes until all the moisture has gone.
    *Serve hot, sprinkled with fried onion.


COCONUT BARFI




Ingredients :

   1. Scrapped coconut -2 cups
   2. Coarsely shredded coconut -1 cup
   3. A few drops of yellow color
   4. 8-10 strands of saffron soaked in 1 tbsp warm water
   5. sugar-1 1/2 Cups
   6. Milk-1 cup
   7. Ghee -1 tbsp
   8. Cardamom powder -1/4 tsp


Method :
      

    * Mix both scrapped and coarsely shredded coconut in a large pan.
    * Add milk to the mixture and cook till froth starts appearing.
    * Stir the mixture while cooking. Do it for about 15 minutes.
    * Now, add saffron, color and cardamom to the existing mixture.
    * At the same time, start boiling sugar to make sugar syrup.
    * Pour it into the coconut mixture, stirring gently and continuously.
    * Afterwards, add ghee and continue stirring, till a soft bulge is formed.
    * Put the whole mixture into a large plate which is greased. Spread the mixture very lightly.
    * Cool the mixture so that it solidifies and cut it into squares or any other shape that you want.
