It is time for the cook to make his sandwich and he has all his ingredients ready. He has his loaves of bread. He has his vegetables and his sauces, and he also has his meat ready.

Chutneys are a huge favourite in the kitchens of the sub-continent. The cooks of the sub-continent have also been known for using a delicious mix of herbs and spices to flavour their dishes. Herbs and spices can produce some of the most intoxicating chutneys known to diners.

When the cook is applying the chutney, he should know exactly how much of it to apply. Too much of it can be very pungent and it can spoil the taste of the dish. Too little of it and the diners would not be able to taste the flavour at all. The chutney has to be applied in just the right combination so that it combines well with the vegetables and the bread and gives the perfect flavour as it hits the taste buds of the diner.

The best cooks know that some chutneys are fiery and can only be consumed by diners who can handle spicy food. While a fiery hot sandwich may be an oddity in the kitchens of the West, it is found quite commonly in the culinary traditions of the East. Here cooks love spicy food and they love adding some extra masala to their cooking. In case they do not add that extra masala then their customers make it a point to ask them to add some to the dish that they are eating so that it is spicier.

Ingredients like garlic and onion are used quite liberally so that the chutney gets that pungent taste that is loved so much by customers in these parts. They also use a lot of mint, curry leaves and coriander so that the chutney gets both flavour and colour.

Inspired by the kitchens of the East, cooks in the West have also started experimenting with chutneys. They also wish to give their customers something new to munch on, and while they might tone down the spice a little bit, they definitely make it a point to boost the flavours. The huge sales that supermarkets report with regard to their readymade chutneys is proof enough of how popular this ingredient has become.

So next time you are making a sandwich and you are bored with the usual ingredients, try putting some chutney in it to spice it up a bit.
