Thin crust style is offered most often by small neighborhood pizzerias as opposed to the major chains that usually sell thicker crust. New York style is chewy, while Midwestern styles like St. Louis style are crisp. Brick Oven Style Although not really a crust style, brick oven style is included here because the crust has a unique flavor. It is cooked using a dry, high heat that makes it crisp. This style is often considered to be gourmet pizza and is often offered in restaurants. French Bread French bread style doesn't actually use dough but instead puts sauce, cheese and toppings on slices of French bread. The bread is sliced in half and the toppings are placed on the open side. It's then baked. One of the good things about this style is that it's easy to make at home in a toaster oven.
