Risotto goes extremely well with seafood and is very flexible with the ingredients you can combine with it.
I have even used squid before in risotto and it tasted great. Allow yourself to experiment with different types of fish and seafood. The secret to great risotto with any kind of seafood or meat is great rice. Use short-grained rice every time. I personally love Arborio rice but I often use Carnaroli too. There are quite a few types of short-grained rice so experiment and find the rice you personally love. Try Padano,Cook Great Seafood Risotto With These Tips Articles Vialone Nano, Roma, and Originario as these have all worked fine for me the past. For example, I have used Saffron to make the dish look more appealing. Once again, the only thing limiting is your imagination. I have even created Thai Seafood Risotto which is surprisingly delicious.

I've been guilty of that before!I have never seen an Indian seafood risotto recipe though, if somebody can make that work I'll be in awe of that person.Make sure you serve those exotic risotto recipes to your friends and not to your Italian mother in law.
The fact is that most people don't like their recipes modified to such a large degree. I personally hate Indian fusion food because I'm Indian and I have some sort of nationalistic pride towards my food. Lemon and oranges are also a great way to add a tang to your risotto and goes amazingly well with salmon risotto. Seafood and lemons are just an amazing combination for some reason that completely baffles my mind. I suggest red peppers to add a bit of spice if you enjoy spicier food. The possibilities are endless and risotto is a dish that's very adaptable to whatever you want to do to it.
