Foods low in glycemic index are easy to find.  Converting them into tasty recipes that you will enjoy is the challenge. And I have made it a personal quest to do so.  Especially since I like to eat so much yet want to stay a healthy weight.

MY BEST BEAN SALAD

I created this bean salad for my family picnic's originally,Foods Low In Glycemic Index Help Sugar Addicts Stay In Control Articles but it is good anywhere anytime. I think this is the best bean salad I ever made.  It is super filling, super tasty and a win with everyone I have served it to so far. I wanted to share this with you because it really helps me to keep my blood sugars up for a nice long time and I don't crave the junk as much when I am in that nice "sweet spot". It also keeps me away from all those tempting dishes my relatives keep bringing to the picnics.

Here it is:

•             2- 15 oz. can of red kidney beans, rinsed, drained

•             1 -15oz. can cannelloni beans, rinsed, drained

•             1- 15 oz. can of black beans, rinsed and drained

•             3 celery stalks, halved lengthways, thinly sliced

•             1/2 cup chopped flat-leaf parsley leaves ( do not omit this!)

•             1/2 red onion, finely chopped

•             1/4 cup raw apple cider vinegar

•             2  tbs olive oil

 

Mix all together and then refrigerate for at least 2 hours.  This is great even for Easter. It would go great with the traditional ham dinner that my family enjoys.  That way you will always have something there that is healthy for YOU to eat! And it will keep you full and happy and away from the dessert table!  and that is a big win! And if you do want to indulge a little, you will keep it at just a little because you are so full!  Ever have just 2 bites of cheesecake?  You can do it if you have this bean salad as part of your main meal first.

Please note:  it is best when you use fresh flat leaf parsley.  It does make a difference in the flavor. So splurge on it at the grocery store. It really is not all that expensive and enhances the flavor tremendously.  Your family will wonder when you became such a good cook.

Another factor in this recipe is the Apple Cider Vinegar.  It does make a difference to use this  Apple Cider Vinegar (Organic) 32 fl.oz This brand has its own unique flavor. I think it is because it is "in the raw".  You get all the health benefits from it...not the depleted, processed kind you get in the grocery stores.
