The results showed a decrease and a slowing in the growth of cancer cells in the esophagus in 29 out of 36 participants. Dr. Chen and her team do not know the exact compound in strawberries that fights cancer, but they are eager to conduct more studies.

In 1829, scientists discovered a compound called salicin from the bark of the willow tree, which led to the invention of aspirin. This discovery changed how people deal with pain. Today, more sophisticated drugs are being developed to combat serious conditions. Citrus pectin is a simple soluble fiber found in the pith of many citrus fruits. Researchers discovered that by reducing the size of the pectin molecules, they could enter the bloodstream and bind to abnormal cells. Modified citrus pectin that is readily and effectively absorbed into the bloodstream can actively promote cellular health.
