Viewing how the employees dress can give clues to public members of how well the establishment is following health guidelines. Employees should be well dressed in neat and clean clothing. Workers in view should use paper towels, or hand wipes, to wipe their hands (not clothing). Foods being placed on buffet lines should be appropriately hot or cold. Cold items should be iced under serving bowls. Hot foods should be steaming hot when placed on the buffet for eating services.
