Chocolate muffins with apricot and carrot

Ingredients

Dessert per 10 pieces of 7 cm ø

2 eggs
150 g of butter, soft
120 g of sugar
200 g of dark chocolate, 55% cocoa
100 g of white flour
1 teaspoon of baking powder
100 g of ground almonds
2 sockets of salt
10 marzipan carrots
Stuffed
100 g of frozen apricots, thawed before use
80 g of carrots
1 sachet of vanilla sugar

For the filling, cut the apricots into small pieces and finely grate the carrots. Mix with half the vanilla sugar and simmer for approx. 5 minutes, until the juice thickens. Let it cool down.

Preheat the oven to 170 ° C. Divide the yolks from the whites. In a bowl, froth the butter with the egg yolks and the sugar with an electric mixer.

Melt the chocolate in a double boiler, then add it to the cream of egg yolks and butter.

Mix the flour with the baking powder and the almonds and add to the mass. Beat the egg whites with the salt until stiff peaks and add them to the mixture carefully. Place 2 paper cups in each hollow of the muffin pan.

Fill each hollow with 2 heaped teaspoons of dough. Make a cavity in the centre of the dough and fill it with 1 teaspoon of carrot and apricot filling. Keep the remaining filling. Distribute the remaining chocolate mixture in the hollows. Bake the muffins in the centre of the oven for approx. 30 minutes. Remove from the oven and leave to cool on a rack. With the juice of the carrot mass and the leftover vanilla sugar, prepare a glaze to reduce over the heat.

Spread a pinch of icing on the muffins and decorate them by placing a marzipan carrot on the icing.
