For a delicious Summer Fruit Dessert Pie, gather the following ingredients: 1/4 cup of butter, 1/2 cup sugar, 1 egg, 1/4 teaspoon vanilla, 1/4 teaspoon lemon or lemon extract, 1 1/4 cups of flour, 1/4 teaspoon baking powder, 1/4 teaspoon of baking soda, 1/4 teaspoon of salt, 4 ounces of your favorite cream cheese, 1/4 cup of confectioners' sugar, 1 cup whipped topping, 1 sliced banana, 1 cup of sliced strawberries, 8 ounces of mandarins, 2 kiwifruit, peeled, and 1/3 cup fresh blueberries. For the gaze, gather: 1/4 cup of sugar, 1/4 cup of orange juice, 1/4 cup of water, and 2 teaspoons cornstarch.

In a large mixing bowl, add your cream butter and sugar. After this, beat in the egg and all extracts listed. Once this occurs, add flour, baking powder, soda and salt. Beat all of this well and if the kids are around, remember to let them stir! Cover all of these ingredients and let chill for thirty minutes. Press and knead the dough into a greased pizza pan (12 inches is perfect) and then bake at 350 degrees around 14 minutes.
With another mixing bowl, beat cream cheese and sugar. Add your whipped topping and mix to your desired thickness. Let the kids spread this over the crust. Once this is completed, add your fruit around the pie. Bring all glaze ingredients to a boil and constantly stir the pot. You can boil for about 2 minutes and once cooled, drizzle over the fruit.
