  1. When you buy raw fish from the supermarket, how do you know it is fresh? The easiest way to do that is to smell the fish, every person can recognise the stench of rotten fish. If it smells OK, check its gills, they have to be red. If they are grey or white, it means that the fish is not fresh.   2. After you buy the fish, you have to remove its guts and scales. I personally recommend that you ask the shop attendant to do it for you, but if you want you can do it by yourself. Mind that some kinds of fish have a black membrane on their inside, you have to remove it. If you don't, it will make the fish taste bad after you cook it.
  3. When you get home with the cleaned fish, wash it well. Leave it to drain off a little bit and put it in the fridge, if you are not going to cook it immediately. Put it in a plate and wrap with plastic foil. If you don't cover the fish with foil, its aroma will fill up your whole refrigerator, which can be a little unpleasant. Here is the recipe, mind that it is for big fish:

Take a lemon or two, depending on the size of your animal, and cut it in slices. Place them inside the fish with one bay leaf, and a few grains black pepper.

Cover the bottom of a roasting pan with sea-salt and put the fish on it. Now cover the whole fish with sea salt, and put it in the oven for thirty minutes on 180 degrees Celsius. When you take it out, the meat will be tender and delicious. You mustn't worry about this big amount of salt, because the fish only takes as much as it need, it won't get salty.

You can serve this dish with mashed potatoes, fresh salad, or plain. It is delicious either way. If you want you can prepare some kind of a lemon sauce for the fish, made of lemon juice, olive oil, black pepper and a little ground lemon rind (use only the yellow part).
