chicken or shrimp 1 pound, made into medium-size pieces
1 ½ cup of mushrooms, sliced vertically
6 – 8 galangal, sliced thin
4 to 5 tbsp fish sauce
¼ cup chopped tomatoes
2 tbsp red chilli pepper (quantity can be more or less than this, as you like it)
4 to 5 kaffir lime leaves
Thin slices of 5 shallots
7 to 8 tbsp lime juice
2 stalks of lemongrass, cut into approximately one inch pieces
1 tbsp of chilli paste, in soy bean oil
3 cups of water
1 cup of cilantro (to sprinkle for garnishing)

To start with the making of the soup, take the water into a saucepan of medium size and bring it to a boil on high flame. Then add the kaffir lime leaves and lemongrass and cook for 2 minutes.

Now lower the flame and add red chilli, galangal, shallots, fish sauce, lime juice and chilli paste in soy bean oil. Add mushrooms and tomatoes too and let it get cooked for a long while.

Now the chicken or shrimp is to be added and is to be cooked on a high flame, but not to be stirred. Even after the shrimp or chicken is cooked, you have to keep the flame on and cook for 2 more minutes. Sprinkle the coriander leaves on the top. And that’s it!
