Veggies for Fall!

Vegetables are good all year round; if you want to eat locally, or get what is 'in season' here are some great ideas for the Fall Season.

The weather is starting to cool down a bit.
Doesn’t it make you think about the deliciously warm soups and stews that your mother and grandmother used to make?
(Okay, for some of you maybe not.)  There’s just something about having the windows open, a cool breeze blowing in and a big pot of soup simmering on the stove filling the house with so many mouth watering aromas that you can hardly wait until dinner.
The  good thing about soups and many stews, besides being a hearty dish, is that they can be prepared in a very healthy and nutritious way. You can get creative by adding your favorite vegetables and seasonings. Live on the edge and add a little something to that pot that you would not normally add! Vegetables are loaded with many essential nutrients that are so good for you. You know when you eat right because your body just feels better!
Another motivation to eat those veggies is the positive effect they can have on your skin. There are many vegetables that are actual collagen boosters and it is that collagen that keeps our skin looking plump and healthy. Uncooked, highly colored fresh vegetables are the best places to find high levels of antioxidants.
Here are just a few good vegetables to choose from:
  • broccoli,
  • kale,
  • peas,
  • peppers,
  • spinach,
  • sweet potatoes
  • tomatoes are just some of the delicious vegetables you can eat to help keep that youthful glow going.
