Chicken Noodle Casserole

 

Ingredients:

  • 1 can (10 3/4 ounces) Condensed Cream of Mushroom Soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables
  • 2 cups cooked chicken cut into bite sized pieces
  • 2 cups medium egg noodles, cooked and drained 
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Cheddar cheese

 

Preparation:

  1. Pre-heat oven to 400°F.  
  2. Stir the Mushroom Soup, Milk, Vegetables, Chicken, Noodles, Parmesan Cheese and Black Pepper in a 1 1/2-quart casserole dish.
  3. Bake for 25 minutes or until the chicken mixture is hot and bubbling. 
  4. Stir the chicken mixture. 
  5. Top with the Cheddar Cheese. 
  6. Let stand until the cheese is melted.

 

 

Chicken is easy to work with and it’s a healthy choice for those of us watching our fat intake. Ounce for ounce, skinless chicken is one of the lowest-fat meats around. Although breast meat has the lowest fat content, even skinless dark meat is comparatively low in fat and high in iron and other essential vitamins and minerals. Plus, a good portion of the fat it does have is unsaturated – the good kind of fat.

Pesto Chicken

 Ingredients:

 

  • 4 boneless skinless chicken breasts (1/2 inch thick)
  • 1 tablespoon basil pesto
  • 4 tablespoons mayonnaise
  • 1/2 cup Panko bread crumbs
  • 1/2 cup finely shredded Parmesan cheese

 

 Preparation:

 

  1. Heat oven to 400°F. 
  2. Line baking sheet with foil and spray with cooking spray. 
  3. Put chicken pieces one at a time in between plastic wrap or waxed paper and gently pound with flat side of meat mallet or rolling pin until 1/2-inch thick.
  4. Mix pesto and mayonnaise together and put in a dish.
  5. Mix together bread crumbs and cheese and put on a plate.
  6. Dip chicken into pesto mixture then dip in Bread Crumb mixture. 
  7. Place on baking sheet.
  8. Bake 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (165°F) and coating is golden brown.
