In simple language you can say that it is an Indian dumplings which is wrapped into a spicy thick curd mixture.

For Vadas

  1. Urad dal(dhuli)/Mung dal(dhuli) – 1 cup Split Black gram/ Split Green gram
  2. Semolina – 3 tsp
  3. Water -  2 to 3 tsp(if needed)
  4. Salt – 1/4 tsp
  5. Asafoetida – ¼ tsp
  6. Baking powder – ½ tsp
  7. Ginger – 1 piece small
  8. Cumin – ½ tsp
  9. Oil to deep fry vadas
  • For making spicy water
  1. Water 1 litre
  2. Salt – ½ tsp
  3. Red chili powder – ½ tsp
  • For stuffing
  1. Grated carrot – 1 tbsp
  2. Pomegranate – 1 tbsp
  3. Raisins – 1 tbsp
  4. Cashew – 1 tbsp(roughly chopped)
  5. Chaat masala – ¼ tsp
  • For Curd
  1. Curd – 2 cups (thick)
  2. Cumin powder – ½ tsp
  3. Red chili powder – 1/4 tsp
  4. Chaat masala – ¼ tsp
  • For garnishing
  1. Black salt – 1/4tsp
  2. Mint powder – ¼ tsp
  3. Black salt
  4. Cumin powder
  5. Red chili powder
  6. Salt
  7. Chaat masal
  8. Tamarind sauce (imli ki chutni)  - ¼ sup

Wash the lentil properly and soak it over night in water.

Drain its water and add it to your grinder with cumin, ginger and asafoetida.

Make a fine paste from it. Do not add water in it. If needed, then only add 3 – 4 tsp water in it.

Take it out this paste from the grinder and in a bowl, mix it with ½ tsp salt and baking powder.

Whisk this paste till fluffy.

Cover it and keep it aside for 30 minutes.

Meanwhile, you can prepare spicy water and stuffing for dahi vadas.

In a big pan, add water and when it starts boiling, add salt and red chili powder to it, stir it and take it out from flame.

Cover it and keep it aside for further use.

To make the stuffing, mix all the ingredients of stuffing and keep it aside.

After 30 minutes, add semolina to this batter and mix it properly.

Cover it and keep it aside for 5 minutes.

Take a clean and hard plastic sheet in your hand and oil it.

Put 1 spoon batter on it.

Dip your pointer finger in oil and spread the batter which you have just placed on plastic with your oiled finger.

Put ¾ tsp stuffing in the middle of the batter sheet and then fold your plastic sheet from middle to meet the edges of the batter sheet.

Unfold the plastic.

Wet your hand and take out dahi vada very carefully, immediately slip it into oil to deep fry it. In this way deep fry all the vadas.  Dip deep fried vadas into hot spicy water.

Leave it for 30 minutes.

Meanwhile, prepare curd to fold Stuffed Dahi Bhallas into it.

In a bowl, mix all the ingredients of spicy dahi.  After 30 minutes take out one dahi vada on your palm and with the help of your other palm press it very softly to squeeze out water from it.

Add it to spicy curd, flip it and then take out.

Place it on a serving plate.

Repeat the process with each vada. 

At serving time; sprinkle spices and tamarind sauce on it.

  • Never add more semolina to vada batter. It will make your vadas very hard.
  • You can change the ingredients of stuffing as per your interest.
  • You can add green chili to lentil while making a paste of lentil, ginger, asafoetida and cumin.
  • You can use both dal at a time. I mean to say ½ cup mung dal and ½ cup urad dal.
