When it comes to cooking great ribs, there are generally two types to choose from in the rib world. There are the St. Louis style ribs (spare ribs, from the bottom of the ribs or side) and the Loin Back (baby back ribs, from the top of the ribs and close to the loin). Loin Back ribs are typically smaller with less meat on them, but usually what is there is tender. St. Louis style ribs, however, are much meatier with a greater amount of fat. Personally, we have chosen to use the St. Louis style ribs. We’re big fans of a meatier bite and the fat content because it adds a lot of extra flavor. While we do add a little bit of our own flair, we believe in letting the succulent taste of the ribs shine through. Since we are experts in cooking these style of ribs, we know how to properly render the fat for the best of both worlds. Besides, the St. Louis style is extra bang for your buck. Not only is it tastier, but you get more of that slow-smoked rib meat you crave.
