This ANZAC bar is perfect for people on the go and for those people who need energy. It makes an ideal breakfast bar.

These cyclist energies bars are designed to give you energy to get you through your ride. They are that good that I may have over tasted tested them and I am considering finding somewhere with minimal traffic to ride. ANZAC Energy Bars Ingredients

Dry

2 cups rolled oats
1 1/2 cups pumpkin seeds
1 cup chopped dates
1 1/2 teaspoon cinnamon
¼ teaspoon sea salt

Wet

¾ cup melted coconut oil
¼ cup raw honey (maple for vegan version)

 

Method

  1. Line a small rectangular or square tin with baking paper.
  2. In a food processor process the dry ingredients until it forms a crumb.
  3. Add the wet ingredients until it can stick together.
  4. Pour into a bowl and stir in remaining pumpkin seeds.
  5. Pour into prepared tin and firmly press down to ensure you get even bars and that they will stick together.
  6. Let set in fridge for 2 hours or until set.
  7. Remove from fridge cut into bars.
  8. Enjoy on your next ride.
  9. Store in Fridge.
