Once at home, it is time for you to start to prepare your sorbet. First, you will need a medium sized pot, into which you will pour a cup of water and a cup of sugar. Place the pot on the stove, turn the heat to medium high, and add a pinch of salt to the mixture. You want this mixture to boil for approximately 5 minutes, or until it turns into a syrupy solution. As soon as this occurs, take the mixture and put it into another container and chill it for a bit.

While your syrup mixture is chilling, you can start to prepare the raspberries for your sorbet. Take your lemon, and squeeze a fourth of a cup amount of juice from it. Spritz your raspberries with the lemon juice to help keep them from changing colors, or fermenting prematurely. In order to give your sorbet a smooth and light texture, the raspberries need to be completely broken down with a blender or food processor. Place the raspberries into the processor and pulverize them until you have a fine and smooth consistency. This usually takes a few moments. Afterwards, pour the raspberries into a strainer to get rid of any chinks or pieces that did not grind up properly. You have now made fruit puree.

Take the syrupy mixture you have previously prepared, incorporate the raspberry puree into it. Slowly add the syrup to your fruit puree, and make sure that you sample it as you go to make sure that you are satisfied with the taste. Add a squeeze of lemon to further enhance the flavor. Since this is a frozen desert, you may want to add more flavors to enhance the taste.

Pour the combined mixture into a container and place a lid on it. Your sorbet needs to chill until it reaches a constancy that you like. Leave it in the freezer and remember to stir it every hour to give it a uniform texture.
