Many butchers lost their fingers due to not paying attention and accidentally cutting one off. On the newer machinery it is much more difficult to cut off any appendages. The newer machinery also has emergency shut off buttons or switches. This means that if something gets lodged or stuck in one of the machines the butcher can easily shut the machine off. The older equipment was much harder to shut off and if you got your hand stuck in a meat grinder you could easily have lost an entire hand. The newer machines are also updated with a breaker that prevents a short. This means that when a short happens in the plug that it is plugged into the machine will not burn out. Burn out means that the machines internal electrical wires get so hot that they melt, when these wires melt the cease to work. The new machines also come with an emergency shut off that activates when the machine gets too hot. This also avoids the machine from burning up. The second reason why the new equipment is better than the old is because of how much cleaner they are. In the old equipment cleaning and fixing the machine usually requires the disassembly of the entire machine. Because of this fact many butchers never cleaned the entire machine, which can cause diseases and germs to grow. The newer equipment is easy to clean.

The final reason why the equipment is better is because it is faster. Most of the newer equipment you can just set it on a specific speed and it instantly will cut whatever length you need the meat to be. When dealing with the old machinery you had to slice the meat as good as you could, and as straight as you could. The new equipment is safer, cleaner, and faster and that is why butchers use the new equipment today.
