Indian Pearl Sago is a very popular indian fruit. The health importance of it is very high. It is the reason behind the use of it on Indian retual fast. After soaking it into water it becomes very soft and spongy. It looks just like pearls. Recipe made with sago are very high in iron and vitamins but very low in fats. Thats why docters also sugges it during illness. My recipe is such as you can take it on your breakfast and on your evening snacks also.
INGREDIENT OF SABUDANA KHICHDI RECIPE
Sago – 1 cup
Potato chopped – 1 cup
Onion chopped – 1 cup
Peanut roasted – ½ cup
Mustard – ½ tsp
Curry leaves – 7-8 pieces
Green chilies chopped – 2
Coriander leaves chopped – ½ cup
Salt – ½ tsp
Lemon juice – 1 tbsp
Oil – ¾ cup
At first add sago to a heated pan and make it warm. The colour of sago should not change.
Now let it cool at room temperature. Touch sabudana, if you feel it is of normal temperature then in a bowl add it with water. See you do not have to pour too much water as you do for soaking any other things. You just have to pour water in an amount so that the sago or sago is about to dip completely and then stir it with a spoon. Cover it and let it be like that for at least 3-4 hours. Take out lid and see how much free flow your sabudana is?
Now in a pan pour oil and heat it.
Now add curry leaves, mustard and green chilies to it.
Let the mustard crack properly then add chopped onion, chopped potato and ½ amount of salt to it.
Cover it and cook it on the low flame till potato becomes brown and also become soft.
Stir in between. When potato becomes brown; then add soaked sabuda and salt to it.
Mix it properly and cook it on the low flame for 5 minutes. Do not forget to cover it.
Meanwhile roughly crush roasted peanuts in a crusher.
After 5 minutes add crushed peanuts and coriander leaves to it.
Mix it and add lemon juice to it. Your Sago Recipeis ready to serve.
