The Gujarati food combines savory and sweet, the Rajasthani food employs dry ingredients and the South Indian Brahmins love a dollop of coconut milk in their preparations. Veg. restaurants cannot be delegated to a certain region or cuisine with menus that combine South Indian breakfast to North Indian curries and Gujarati sweets for dessert.

Thali would include beverage, a portion of rice and or flatbreads with a number of dals, curries and vegetable preparations with sweets that make a complete meal that is unique to a particular culinary tradition. For beverages, while the Rajasthani Thali would include Chaas the Marathi Thali would boast Solkadi. The thali restaurants peddle these authentic meals and sometimes come with a range of other ancillary features like fantasy service and ambience in connect with the region to holistically involve the patrons in partaking of the cuisine with its entire culture and heritage in purview. Veg. restaurants don’t necessarily offer singular regional cuisine and a majority of such restaurants offer a multi regional menu and provide for all cuisines to broaden their consumer base and play at such offerings to increase revenues.s
