You can use any chicken, but it is better to use boneless, skinless chicken breasts. Next, you will need some vegetables. These can be celery, carrots, onions and anything else you desire. Then add the vegetables, the herbs and spices and the chicken bouillon cubes. Fill up half the crock-pot with water. Put the lid on and set the pot to low or medium and cook for 8 hours. When it is done, use tongs to remove the chicken and cut it into bite size pieces. Put the chicken back into the pot and stir. If you want a thicker soup, you can add cooked rice or noodles to it. Keep warm and enjoy!
